Farm News

All of your favorite Piedmontese cuts are back in stock! If you are a fan of heart, tongue - or anything that generally comes one (or two) per animal, be sure to visit us early, as we do sell out fast! For those of you who haven't come out to our Sunday Farmstand to see for yourselves, all of our beef is bred on the farm, 100% grass fed and finished. We practice sustainable farming by rotationally graze our herd over 180 acres on pastures that are untreated with chemical fertilizers, herbicides, or pesticides. Our mission is to heal the land, promote positive growth, and of course give our cows a delectable menu of the freshest, most tender shoots of grass.

Will had the smoker out yesterday afternoon which means more Duke-approved dog treats are on the way for all you dog lovers out there! For those of you whose pooches haven't experienced this delicious, one-of-kind treat, we take the meaty bones of our premium Piedmontese and slow-smoke it for hours with pecan wood until it yields a completely human-worthy, yet-canine friendly delicacy.

Featured Cut

This week's featured cut is the Ribeye. The ribeye comes from the, you guessed it, rib section of the animal. The term ribeye means a rib steak with the bone removed. Depending on where you go in the world you can hear this cut called Beauty Steak, Market Stek, Delmonico Steak, Scotch Filet, or Spencer Steak. The ribeye is a cut is especially known for being both tender and flavorful. While our meat is grassfed and therefore is more lean than conventionally raised meats, the ribeye is understood to contain more marbling than other cuts and therefore ideal for slow roasting or grilling.
